Salmon burger with mango dressing
A nice and fresh salmon burger on a sunny day, that is hard to beat!
For four persons:
500 gram salmon fillet
0,5 dl (50 ml) breadcrumbs
1 red chili
1 dl (100 ml) cilantro
1/2 yellow onion
1 garlic clove
zest from one lime
2 tsp lime juice
1 tsp salt
1 pinch black peppar
Grind or chop the salmon finely. Mince onion, garlic, chili and cilantro in a food processor.
Mix it finely with the salmon and add the rest of the ingredients.
Form the patties and let them rest for 30 minutes in the fridge.
100 ml Turkish yoghurt (any fat yoghurt(10% fat))
1 fresh mango - chopped in small cubes
1/2 red onion - finely minced
3 tbsp mango chutney
1 tsp salt
Mix together and let rest in the fridge.
Light your grill for direct grilling and grill the burgers, 4 min per side.
Use a burger bun or your favorite bread. Brush on some olive oil and grill it until toasted.
Put on a patty, dressing and top it with some salad and a slice of tomato. Put on the other bread and stick a skewer into it.
Now it´s time to serve this nice and juicy salmon burger!!
